Ingredients
- 1.5 Cups White Rice
- 2 Cups Water or Stock
- 1 tsp Kosher Salt
- 1 TBS Butter
- ½ Cup Classic Salsa or store-bought salsa
- Garnish: cilantro sprig or lime wedge

Original
#1: Prep the Rice
Use the mesh strainer to wash the rice. Add the rice, salt, and butter to the saucepan and heat on high until the butter is melted, ~2-3 minutes. Add the broth or water and salsa and distribute evenly. The liquid should be about ~1/8-inch above the rice level.
#2: Cook the Rice
Cover and bring to a boil 3-5 minutes. Reduce heat to low [setting 3/10] and cook for ~20 minutes. Remove lid allowing steam to escape and rest for 2-3 minutes.
#3: Finish and Serve
Mix the rice and serve. Garnish with a cilantro sprig or lime wedge.

I’ve discovered that this is one of those recipes my kids have to be in the right mood to consume. There is no logic behind this — one day they like it, the next time they will outright refuse to eat it. Either way, I serve it to them every time!

Dear SooN COOKS of the internet,
We ate a lot of rice in my childhood home — all of which originated from a box. On taco night our regularly scheduled Uncle Ben’s minute rice was replaced by Rice-A-Roni Spanish edition. I still have a special place in my heart for that recipe. However, after I started making my own salsa I discovered I could just add some to my white rice and raise the bar instantly.
